As I shared last week, I am going to strive to make this blog about more than just crafts and recipes.
However, I do have a bit of a backlog of crafts and recipes to post here.
I don’t find Carrot Cake Cupcakes particularly spiritual (although they are really really good), but I made these recently for my beloved husband’s birthday, and he is an important part of my faith, my life, our family, my everything.
I don’t share about him very much here, so I thought I’d push myself to do that a little bit today.
Here is a pic of our family.
My husband and I had just (like just) arrived home from a whirlwind trip to Vegas and were hurriedly picking up our kids before (another) snowstorm hit.
That’s why we are bleary-eyed.
But, as you can see, we have 2 little ones, Gus soon to be 3 and Bernadette, 1.5.
We are also expecting #3 (Lord help us) in June.

I love so many things about my husband, too many to list, but what I don’t like is that he travels, a lot.
And, when he travels he goes far away and is gone for 2+ weeks.
He has been home for a week now, but before that, he was gone for nearly 2 and a half weeks to The Philippines.
And while he was gone, he missed his birthday.
On his actual birthday, I snapped this picture and posted it on Facebook for him.
I complain and I struggle while he is gone, but I have to give my husband credit: when he is here, he is truly HERE.
With all the technology and distractions in our lives, it is soooo easy for him, me, anyone to just totally zone out when at home.
He works hard and is often struggling to get back into this timezone, and yet when he is home he is here for us.
Today we dove (head-first) into the scary world of potty training and my husband is a huge, active part of it.
I am so thankful.
He is also really good at things I’m not.
He loves to take the kids and wrestle with them on our bed (just like my dad did with us).
I swear, I never see smiles that big on my kids’ faces at any other time.
When he arrives home from a long trip the kids never hesitate to run to him.
Never.
They love him and they know that when dad walks in the door he is all theirs.
And so, a great dad deserves a great treat on his birthday.
I wanted the pay-out without the wait.
They really are great, great cupcakes.
They turned out super moist and yummy.
And, if you are like me, you can double the frosting recipe and use that in all sorts of other treats.
Yup, I did that!

My hubby doesn’t travel overseas, but he is gone ALOT so I understand how you feel! Great recipe!
Soooo yummy!! Carrot cake is one of my favorite things so this is right up my alley 🙂
