Quinoa Greek Salad

Quinoa Greek Salad

As a stay-at-home mom, I struggle to get motivated to eat more than just chicken nuggets and peas for lunch.

Often times I make myself a salad, but I really need some protein.

Humm…when two kids are hungry and ready for naps, I don’t have a ton of time to cook, so I need something easy.

Once again, enter quinoa.

This is a nice fresh salad with lots of veggies.

Prep Time: 10 minutes

Ingredients:

  • 1 cup cooked Quinoa
  • 1/2 cucumber sliced and quartered
  • 1 tomato sliced
  • Feta Cheese
  • 1/2 red pepper diced
  • Black Olives
  • Greek Salad Dressing

Directions:

  1. I recommend cooking Quinoa in bulk before creating this salad.  It keeps well in the fridge and makes throwing this salad together super quick.  For info on cooking Quinoa, click here.
  2. Combine elements and toss.  Top with crumbled feta.  For a milder version, use extra virgin olive oil instead of the Greek Dressing.

Again, a super simple salad.  A great go-to is filling and fresh and delicious.
